The hubs had the last golfing tournament of the season, so I decided to make something nice for when he came home. The weather had become cold, so I decided to make a hearty beef stew. Since I wanted to put in some gym time, I decided to use the slow cooker.
Chopped up celery, carrots, potatoes, onion, mushroom, tomatoes and pan-seared beef.
Mix together with some red wine, beef stock and herbs.
Cook on low for 6-8 hours.
Thicken the liquid with potato starch.
Add some frozen peas and serve some comfort in a bowl.
