I'm still having trouble adjusting to the daylight savings time change and the early advent of darkness. Too soon. When we finally get home from work, it's a race against time to prepare dinner before it becomes too late for a heavy meal before bedtime. Working with what was on hand, I decided to make a beef, macaroni and cheese dish.
The art of making a bechamel, or white cream sauce, it an essential skill. Once the bechamel is starting to nicely thicken, I added grated mozzarella cheese to melt before tossing with the ground beef, penne pasta and diced tomatoes. This was one of the few meals I was able to pull together in about 30 minutes. The leftovers were perfect the next night reheated in the oven.
