The weather is supposed to turn colder and I'm in soup and stew mode. Tonight I made one of my favorites, potato leek soup, but without any dairy.
A little amuse bouche.
Salami with bleu cheese and dates/kalamata olives, plus apple and brie.
Simmering potatoes with leeks, onion and water, with herbs.
Puree with an immersion blender for potato soup perfection.
I made enough to doctor the leftovers with other toppings such as scallions, cheese or pancetta.
