Planning a Vegan Dinner Party in under Two Hours

Ever wonder if you could plan a dinner party for 6 people on the fly? Ever think you could do so with a vegan dietary restriction? It's possible to put together a delightful, nutritious and varied menu in two hours if you know which websites to check for inspiration. I looked at 101 Cookbooks and checked out some Pinterest Vegan pics. I decided to create a colorful menu to feed the eyes as well as the palate.
Kale with carrots, farro, avocado and Green Goddess dressing.
Farro may be one of my new favorite grains.
Moroccan carrot, chickpea, dried fig and mint salad.
The cumin in the salad dressing added an interesting flavor. 
Quinoa salad 
with homemade pesto, artichoke hearts, sundried tomatoes, olives, heirloom tomatoes and roasted peppers.
Heirloom tomato salad with cucumbers, red onion and dill.
My favorite orange salad with olives, red onion and mint.

In addition to this array of salads, I made a vegan lasagna with silken tofu, spinach, sweet potato, onion, mushrooms, tomato and broccoli. The key to any fun dinner party is the company. We were celebrating the birthday of my husband's good friend and bandmate, and it was a pleasure to open our home and hospitality to the group.
