Pork "Nicoise" Salad

When the weather reached the high 80s this week, I needed to make something lighter for dinner. Taking a riff off of a nicoise salad with tuna, I substituted a pork tenderloin that I seasoned with some Oklahoma seasoning.
Arugula, cucumber, tomato, boiled egg, kalamata olives, potatoes, sliced pork and roasted broccoli.
